A lot of Asian stuff...

Whenever I don't know what to take to work, I like stir-frying all Asian-flavour compatible veggies in my fridge and wrap them up in rice paper. My favourite dipping sauce is a bought one called "Sweet-sour sauce for chicken"... but it's great with anything!

Another thing I have wanted to try for ages is General Tao's Tofu of vegweb. I used arrowroot powder instead of cornstarch to thicken the soup, and though I was very critical towards it because I've grown up with authentic Asian food, I liked it very much for its comfort food Asian take-away flavour. Plus, I never managed to get tofu this crips before.

What to do with loads of frozen spinach...

when you don't have a freezer?

Make spinach pesto! I feared it would turn out icky because all recipes I saw used fresh spinach, but still, my version turned out heavenly:

2 cups spinach (probably double the amount fresh spinach)
5 tbsp ground hazelnuts
3 tbsp nutrional yeast
1 clove garlic
salt + pepper
1/2 cup olive oil, 1/2 cup sunflower seed oil

Combine and whiz up in a food processor. Should keep well in the fridge for 1-2 weeks in a jar with olive oil on top.

I had some spelt pasta left over and had the pesto with that, but any pasta will be fine.

Another thing I mad last night as a late-night snack (if I don't eat anything warm after 10 PM, I will wake up hungry in the middle of the night. Really! Even if I eat something at 9:30 PM!)- a soba and vegetable soup based on the no-recipe on Fueled by popcorn- just throw together some chopped up onions, garlic, leeks, soba noodles, vegetable broth, miso paste, chickpeas and diced tomatoes. Yum!

Another try... and another bento!

I tried food blogging a couple of months ago as I enjoy reading and looking at what other people prepare and found there are close to no German vegan blogs- or only hardcore AR ones (nuthin' bad about that, tho).

Then I went to London and my camera died in the palm house of Kew Gardens... for now I'm taking photos with my fancy new mobile which can do everything- but I'm on the lookout for a proper camera. Until then, please ignore my cheezy pics.

Today's lunch at work will be a corn salad stolen from www.fueledbypopcorn.blogspot.com
and some Indian spinach/potatoe curry bake (recipe from vegweb, but I can't find it anymore T_T).
And my love for bento making has awakened from a long sleep... so far I only own one proper Japanese bento, but ordered some today- can't wait for them to arrive!
