Those dishes sound lovely. Can you provide or link to the recipes for the pasta and tomato salad? I love avocado.
For a suggestion for nuts & fruit... I have a recipe for banana bread which I sometimes swap out the banana for canned pumpkin or other soft sweet mushy fruit. I will add nuts (pecans, walnuts, or almonds) or dried cranberries depending on the season, occasion or mood. The ingredients are minimal which makes the recipe versitle for substitution.
Unfortunately, it's made with sour cream which adds a bit of tang. I'm not familiar if there is a vegan substitute for dairly in baking that provides the same tanginess. Have any suggestions?
Oh, forgot to mention... Not sure where you live but in the U.S. and Canada there is a free recycling program for used rechargeable batteries. Visit the nonprofit program at www.call2recycle.org, type in your zip/postal code to find participating drop off locations. It's usually a retail store that sells rechargeable batteries and cordless electronics such as cell phones, laptops, power tools, mp3 players, remote control toys, two-way radios, digital cameras, camcorders, etc...
